Roasted Brussel Sprouts with Bacon are an easy veggie side dish that even picky eaters look forward to seeing on the dinner table. Tossed with olive oil, garlic, mustard, and maple syrup, the sprouts roast until they’re golden and caramelized. Then, crispy bacon and chewy dates add texture and a sweet, salty flavor that leaves you coming back for bite after bite!

Sweet and Savory Roasted Brussel Sprouts with Bacon
If you don’t like Brussels sprouts, I’m willing to bet you’ve just never had them cooked properly. Forget the soggy, boiled versions of your past. Roasting is the secret to bringing out their natural sweetness and irresistible crisp edges.
In this recipe, the sprouts are tossed with smoky bacon, chewy dates, and a tangy maple–mustard glaze that caramelizes in the oven. The result is tender sprouts with crispy leaves and bold flavors in every bite. It’s the kind of dish that turns skeptics into believers, and once you try it, you’ll never look back.

Ingredients You’ll Need
Olive Oil: This helps the seasonings cling to the sprouts and allows them to caramelize as they bake.
Brussels Sprouts: You’ll need a pound of Brussels sprouts for this recipe. Trim any brown or wilting leaves and stems. Then, slice them in half.
Whole Grain Dijon Mustard: Adds a tangy flavor that balances the sweetness.
Maple Syrup: This brings a natural sweetness and helps the sprouts caramelize in the oven. Honey will also work.
Shallot and Garlic: Aromatic and savory, these infuse the sprouts with depth as they roast.
Spices: Salt and pepper balance all the ingredients, and crushed red pepper brings the perfect touch of heat.
Dates: These soften as they bake, adding a chewy texture and pops of caramel-like flavor.
Bacon: Pork bacon works best for flavor and crispiness, but turkey bacon can be used as a lighter option.
How to Make Roasted Brussel Sprouts with Bacon
Step 1. Toss all the ingredients in a large mixing bowl, coating the Brussels sprouts completely.

Step 2. Spread the Brussels sprouts in an even layer on a parchment paper-lined baking sheet.

Step 3. Roast until the outside of the sprouts is crispy and the inside is tender. Enjoy!

Serving Suggestions
This roasted Brussel sprouts recipe is quick and easy enough to serve as a side with weeknight dinner options like easy chicken alfredo pasta, fried chicken tenders, and marry me chicken pasta. However, it’s fancy enough for a holiday meal, too, served alongside roasted turkey and baked ham.

How to Store and Reheat
Refrigerator: Once cool, store leftovers in an airtight container in the fridge for up to 3-4 days. The sprouts will soften a bit, but the flavors deepen as they sit.
Reheating: Spread leftover sprouts in an even layer on a baking sheet, and warm them in the oven at 375°F for 8-10 minutes or just until they’re warmed through and slightly crisp. You can also reheat them in a skillet with a bit of olive oil over medium heat.
