She was the queen of turning simple ingredients into something truly special, and this soup was a family favorite. How to Make this Hamburger Soup Recipe

Step 1. Heat a large pot over medium-high heat. Once hot, add the olive oil and then the beef to the pot. Brown the ground beef, breaking it up as it cooks. Add 1 1/2 tsp of salt and 1/4 tsp of pepper. Once browned, drain the meat and add it back to the pot.

Step 2. Next, add the diced onion, green pepper, and celery to the pot and cook for 5-7 minutes until the onion starts to become translucent.

Step 3. Then, add the tomato paste and garlic and cook for an additional 1 minute.

Step 4. Then, add potatoes, frozen vegetables, canned tomatoes, turkey leg, Worcestershire sauce, beef broth, Italian seasoning, 1 tsp salt, bay leaf, and thyme to the pot. Stir until well combined. Bring the soup to a boil and then reduce to a simmer. Cover and simmer for at least 30 minutes.

Step 5. Then, take out the smoked turkey leg, shred it, and add it back to the soup. Let the soup cook for an additional 5 minutes. Then, give the soup a taste and adjust the seasoning as needed.

Step 6. When you are ready to serve, add the fresh, chopped parsley to the soup. Add additional parsley to each bowl as garnish. Serve with grilled cheese sandwiches and enjoy!

  • 2 tsp olive oil
  • 1 1/2 pounds lean ground beef I used 93/7
  • 1 smoked turkey leg
  • 1 medium yellow onion diced
  • 2 stalks celery diced
  • 1/2 green bell pepper diced
  • 5 cloves garlic minced
  • 2 tablespoon tomato paste
  • 24 oz mixed frozen vegetables
  • 2 Yukon gold potatoes diced
  • 2 cans petite diced tomatoes 14.5 oz each
  • 2 tsp Worcestershire Sauce
  • 6 1/2 cups beef or chicken broth
  • 2 tsp Italian seasoning
  • 1/4 black pepper
  • 2 1/2 teaspoon salt plus more to taste
  • 1 dried bay leaf
  • 6 sprigs thyme 6 sprigs
  • 1/4 cup fresh parsley

Instructions

  4. I was going to make this soup, but you never say when to add the smoked turkey leg, only to remove it from the pot and shred. Shouldn’t it be boiled some before adding it to the pot? Thanks.

    • Hey, Helen! Thanks for that call out! You should add the turkey leg in step 4. I am using a smoked turkey leg, which is precooked, so I add it right to the pot and cook it for about 30 minutes in the soup (or until it’s tender enough to shred). I hope this is helpful! 🙂
