These baked jalapeño poppers are stuffed with creamy cheese and bacon, topped with crispy panko, and perfect for game day or party appetizers!

This Jalapeño Poppers Recipe is an easy, homemade take on my favorite appetizer! Spicy jalapeños are stuffed with a creamy, cheesy, bacon-studded filling, topped with a buttery panko mixture, and baked until tender. Savory, crispy, and made with a touch of heat, they’re the perfect snack for game days and parties and are so easy to make!

Crispy, Savory Baked Jalapeño Poppers with Bacon 

Whether you’re here for the game or just the snacks, nothing says game day to me quite like a tray of warm bacon jalapeño poppers. They’ve always been one of my favorite appetizers, but let’s be honest, most versions are kind of a pain. Wrapping each pepper in bacon takes forever, and somehow the bacon never gets truly crispy. And who actually wants soggy bacon?

So I decided to do things differently. Instead of wrapping the bacon around the peppers, I mix it right into the creamy filling to make it extra flavorful, then sprinkle panko and even more bacon on top. This way, you get bacon in every single bite and a perfectly crispy topping that actually delivers on the crunch. I also add a splash of fresh lemon juice to the filling, which cuts through the richness and adds a really nice balance.

The result is the best of both worlds: a rich, flavorful, creamy filling with a crispy top, balanced by just the right amount of heat. I made these for the last party I hosted, and they were a huge hit (one of my law school friends couldn’t stop raving about them and kept going back for “just one more,” but she also was eating for two, sooo… lol).

Ingredients You’ll Need

Jalapeños: Look for large, equal-sized jalapeños. This makes them easier to stuff and promotes even baking. 

Cream Cheese and Sour Cream: These form the base of the filling. Use full-fat, brick-style cream cheese and full-fat sour cream for the best taste and texture.

Shredded Cheese: Sharp cheddar cheese adds a salty, savory taste. 

Lemon Juice: Freshly squeezed is best! The acidity adds brightness, balancing some of the richness of the fats in the filling. 

Garlic: This adds a sweet, pungent flavor to the filling. 

Salt and Pepper: Add more or less to taste. 

Bacon: This adds salty, savory, smoky flavor and a bit of crunch. Cook it ahead of time, and crumble it into pieces before you begin. 

Chives: The finishing touch, these add a bright, slightly oniony taste. 

How to Make Jalapeño Poppers in the Oven 

Step 1. Slice the jalapeños in half lengthwise, and scoop out the seeds and ribs (white membrane).

Step 2. Next, mix the filling ingredients in a bowl until well combined. 

Step 3. Fill each jalapeño half with the cheese mixture, and sprinkle shredded cheese on top. Use your fingers to gently press the cheese onto the filling. This helps it stick!

 

Step 4. Next, mix the panko and melted butter in a bowl, and sprinkle the mixture over each pepper. 

Step 5. Arrange the peppers on a baking sheet, and bake just until tender. Then, turn the oven to broil, and continue cooking just until the topping is crispy and golden brown. 

Step 6. Transfer the jalapeño poppers to a tray, and garnish with bacon and fresh chives. Enjoy warm!

Tips & Tricks

  • Wear gloves when prepping jalapeños. Capsaicin, which is the compound in jalapeños that gives them their heat, can linger on your hands and irritate skin or eyes. So, wearing gloves makes prep much easier.
  • Boost the spice. If you love heat, try leaving a few seeds in the peppers for a little extra spice. Or, add a dash of hot sauce or red pepper flakes to the filling. 
  • Use room temperature cream cheese. It mixes more smoothly and creates a creamier filling without lumps.
  • Don’t overbake. Bake just until the peppers are tender but still hold their shape. Otherwise, they’re likely to become soggy.
  • Prep ahead for parties. Assemble the poppers a day ahead and refrigerate. Then, bake them right before serving for stress-free hosting.

My Favorite Ways to Serve

I like to serve my jalapeño poppers as part of a party platter with other crowd favorites like fried chicken wings, buffalo chicken wings, and chips. They’re also a fun starter for restaurant-style meals! Try pairing them with main courses like fried chicken tenders, baked ribs, or smash burgers

How to Store and Reheat

Homemade jalapeño poppers are best served right away while they’re still warm. However, if needed, you can transfer leftovers to an airtight container and store them in the fridge for up to 3-4 days. I don’t recommend freezing jalapeño poppers once baked. The filling doesn’t thaw well, and the peppers tend to become soggy. 

To reheat, warm leftover poppers in the oven or air fryer at 375°F for about 6-8 minutes or until they’re heated through. In a pinch, you can also reheat poppers in 30-second increments in the microwave, but this tends to make the peppers soft.

Ingredients

For the Jalapeño Poppers

  • 12 Jalapeños cleaned and dried
  • 8 oz cream cheese softened to room temperature
  • 8 oz yellow sharp cheddar halved and divided
  • 1/3 cup full fat sour cream
  • 2 tsp lemon juice
  • 2 cloves garlic minced
  • 1/4 teaspoon fresh cracked black pepper
  • 1/4 teaspoon salt
  • 6-7 slices bacon cooked and crumbled (reserve a bit for garnish)
  • 1/4 cup chives chopped (additional for garnish)

For Breading

  • 1/2 cup panko
  • 1 tbsp butter melted

Instructions

  • Preheat the oven to 375°F. Then, slice jalapeños lengthwise and scoop out seeds/ribs.
  • In a bowl, mix cream cheese, sour cream, lemon juice, crumbled bacon (reserve a bit to garnish the top of the poppers), about half of the shredded cheese, minced garlic, salt, pepper, and chives.
  • On a baking pan lined with parchment, fill each jalapeño half with the cheese mixture. Then, evenly sprinkle each jalapeño half with the remaining shredded cheese (press lightly so they stick).
  • In another bowl, mix panko and melted butter until well combined. Then, evenly top each jalapeño popper with panko and press lightly so they stick.
  • Bake for about 15-18 min until tender (but not soggy and overcooked). Then, broil 1–2 min for additional color.
  • Transfer the jalapeño poppers to a tray and garnish with additional bacon and chives. Serve hot and enjoy!
