These passion fruit bars have a buttery graham cracker crust, a creamy tart and sweet filling, and a whipped cream topping finished with fresh passion fruit. And, since passion fruit is in season in the spring/summer and the fall, these bars are good all year round. Plus, since I use frozen passionfruit juice, you don’t even have to worry about finding fresh passion fruit in your local store! So, what are you waiting for… go and make these NEOW…these things are GOODT!

Creamy Passion Fruit Bars
These passion fruit bars are the sister of my key lime bars and lemon pie bars. They have a graham cracker crust, which holds a rich, creamy filling that’s the perfect tropical balance of sweet and tangy, all topped with a cloud of whipped cream and a spoonful of fresh passion fruit pulp, seeds and all.
And the best thing about this recipe is that it mainly uses frozen passion fruit, which saves you time and money (because passion fruit can be expensive). But if you want to use fresh passion fruit, go right ahead, that’s your business and they will be equally incredible!

Ingredients You’ll Need
For the crust:
Graham cracker crumbs: About 12 full graham crackers, finely crushed. A food processor makes quick work of this, or you can crush them in a zip-top bag with a rolling pin.
Granulated sugar: Just a little, to sweeten the crust and help it set up firm.
Unsalted butter: Melted and mixed into the crumbs until the texture resembles damp sand — that’s your sign it’s ready to press into the pan.
For the filling:
Cream cheese: Make sure it’s fully at room temperature before you start, or you’ll end up with lumps in the filling.
Sweetened condensed milk: The base of the filling — it’s what gives these bars their rich, custardy texture without needing a water bath.
Granulated sugar: A little extra sweetness to balance the tartness of the passion fruit.
Egg yolks: These help the filling set up firm enough to slice cleanly while staying creamy.
Passion fruit juice:Â The star of the show. If you’re using frozen passion fruit pulp or juice, let it thaw first and measure it after melting so your ratios stay accurate. I use this frozen passion fruit juice.
Lemon juice (optional): A small splash boosts the tartness and makes the passion fruit flavor pop even more.
Vanilla bean paste: Adds warmth and little flecks of vanilla bean throughout the filling. Vanilla extract works in a pinch.
For the topping:
Heavy cream: Whipped to soft-to-medium peaks for a light, pillowy topping.
Powdered sugar: Sweetens the whipped cream without making it grainy.
Vanilla bean paste: Just a touch, to tie the topping back to the filling.
Fresh passion fruit: Spooned on top with the seeds still in for a burst of tart flavor and a bit of crunch. This is what makes the bars look (and taste) like they came from a bakery.
How to Make Passion Fruit Bars
Step 1: Prep the pan. Preheat your oven to 350°F. Line an 8×8-inch square baking pan with parchment paper, leaving overhang on two sides so you can lift the bars out easily later.
Step 2: Make the crust. In a small bowl, combine the graham cracker crumbs, sugar, and melted butter, mixing until the texture resembles damp sand. Press the mixture evenly into the bottom of the prepared pan. Bake for 10 minutes, or until lightly golden and set. Let it cool completely, then reduce the oven temperature to 300°F.


Step 3: Make the filling. In a medium bowl, beat the cream cheese until smooth. Pour in the sweetened condensed milk, whisking periodically as you add it. Whisk in the egg yolks, sugar, vanilla bean paste, passion fruit juice, and lemon juice (if using) until smooth and fully combined. Pour the filling over the cooled crust and spread it into an even layer.


Step 4: Bake at 300°F for 30–35 minutes, or until the filling is just set in the center but still has a gentle jiggle, like Jell-O. It will continue to set as it cools, so be careful not to over bake. Let the pan cool completely on a wire rack, about 2 hours. Cover and refrigerate for at least 3 hours (or overnight) before slicing. Use the parchment overhang to lift the whole slab out of the pan for clean, easy cutting.

Step 5: Add the topping. Using a hand mixer, beat the heavy cream, powdered sugar, and vanilla bean paste on medium-high speed until soft peaks form. Spread the whipped cream evenly over the bars, then spoon fresh passion fruit pulp (seeds and all) over the top.


Step 6. Slice and serve.

Tips for the Best Passion Fruit Bars
- Room-temperature cream cheese is non-negotiable here — cold cream cheese won’t blend smoothly and will leave lumps in your filling.
- If using frozen passion fruit juice or pulp, thaw it completely and measure after melting since volume can shift as it thaws.
- Resist the urge to overbake. The center should still jiggle slightly when you take it out — it firms up as it cools and chills.
- Chill the bars fully before slicing. A warm or just-cooled bar will be too soft to cut cleanly.
- For the cleanest slices, wipe your knife with a warm, damp cloth between cuts.
- Add the whipped cream topping and fresh passion fruit right before serving so the topping stays fresh and the bars don’t get soggy in the fridge.

Storage
Store the bars (without the whipped cream topping, if possible) covered in the refrigerator for up to 4 days. If they’re already topped, keep them covered and expect the whipped cream to soften slightly after a day or two — still delicious, just a little less fluffy. These bars aren’t ideal for freezing once topped, but the baked and chilled filling layer (crust and filling only) can be frozen, well wrapped, for up to two months; thaw in the fridge and add the topping fresh before serving.

For the topping
- 1 1/2 c heavy cream
- 3-4 tablespoon powdered sugar
- 1 teaspoon vanilla bean paste
- 1-2 fresh passion fruit with seeds spoon on top as sauce
Instructions
